Regarding your case, you should definitely learn to momentum throttle (MT) if you haven't already.

This is probably the most important technique in this game which lets you maintain your speed high throughout the entire track.

I didn't like the Fat Shark either when I started, because it felt too slippery back then and Gallant has some strong grip.

The key to moving the Fat Shark well is to learn tiny quickturns. You can see brave doing them all over the place in any of his runs.

Other than that you only need some experience for the tracks and for how the machine behaves.
